Pumpkin Spiced Latte Yogurt Parfait
Being basic just got an extra kick.
Pumpkin season is still going strong year after year. The marriage of sweet fall spices makes anything creamy worthy of sweater weather. The pumpkin spice latte may be for the basic, and we are okay with being just that. Our Latte bar blends perfectly with pumpkin pie spiced yogurt. The creamy latte bites are layered with crunchy granola and toasted pumpkin seeds for a new take on breakfast this season.
Tip: Don’t have Pumpkin Pie Spice? Combine ginger, cinnamon, clove and nutmeg for an at-home blend.
5 minutes • Makes 1 serving
Ingredients
- 6 ounces Vanilla Greek Yogurt
- ½ tsp Pumpkin Pie Spice
- 2 tsp Maple Syrup, sub honey if desired
- 1 Tablespoon Pumpkin Seeds, toasted
- 2 Tablespoons, Granola (any favorite!)
- 1 Latte Kickbar bar, chopped
Preparation
- In a small bowl, stir together the yogurt and pumpkin pie spice.
- Swirl in maple syrup or honey.
- Spoon half of the yogurt into a travel jar or parfait glass.
- Sprinkle with half of the pumpkin seeds, granola and Latte bar.
- Spoon on the remainder of the yogurt and top with toasted pumpkin seeds, granola and your Latte bar.
- Drizzle additional maple syrup if desired.
- Store in the fridge or enjoy immediately.
